Process Controller Job Overview

The Process Controller is responsible for monitoring food safety, quality standards, and production processes to ensure compliance with HACCP, GMP, ISO, and internal company standards.

This role involves inspecting production lines, verifying critical control points, and ensuring corrective actions are implemented when deviations occur.

Key Responsibilities

Food Safety & Quality Monitoring

  • Monitor online quality through inspections and check sheets
  • Verify adherence to ISO, GMP, and HACCP practices
  • Conduct temperature monitoring of products, plant areas, and storage facilities
  • Perform glass and bristle plastic checks
  • Conduct verification of scales and cooking equipment
  • Monitor shelf life of products, fillings, and raw materials
  • Ensure proper retention sample management

Process Control & Compliance

  • Verify all CCPs (Critical Control Points) and OPRPs
  • Ensure rejected products are isolated, documented, and disposed of correctly
  • Monitor labelling and coding for traceability compliance
  • Track ON HOLD stock movement in the system
  • Ensure adherence to customer, regulatory, and internal specifications

Audits & Reporting

  • Conduct inspections as per internal audit plan
  • Report deviations through NCA system
  • Follow up on corrective actions and escalate when necessary
  • Monitor process control sheet completion and submission
  • Support internal auditing activities

Operational Support

  • Observe staff adherence to ISO, GMP, and HACCP practices
  • Provide corrective guidance where non-compliance is identified
  • Conduct locker and toolbox inspections
  • Monitor spice room allergen control processes
  • Ensure good housekeeping practices are followed

Training & Development

  • Train line QC checkers
  • Support baking process monitoring
  • Assist with continuous improvement in food safety systems

Minimum Requirements

Candidates should have:

  • Matric with Mathematics and Science
  • Diploma in Food Science, Technology, Microbiology, or Biotechnology
  • Knowledge of HACCP, GMP, and food manufacturing quality systems
  • Internal auditing skills (advantageous)
  • Strong understanding of food safety systems
