Position Overview: Restaurant General Manager (Durban)
Pedros is seeking an experienced Restaurant General Manager (RGM) to lead a high-volume store in Durban. This is a senior-level leadership role responsible for full store accountability, including operations, financial performance, team development, and customer experience.
The RGM acts as the critical link between Store Operations and Senior Management, ensuring that business goals, brand standards, and growth targets are consistently achieved.
Key Responsibilities
Operational Leadership
- Oversee daily operations across kitchen, front-of-house, and delivery
- Ensure compliance with brand standards, food safety, and labour regulations
- Handle operational challenges and crisis situations effectively
Financial Performance
- Full responsibility for store profit and loss (P&L)
- Monitor and optimise key metrics: sales, labour %, cost of sales, and wastage
- Drive local marketing initiatives and promotional campaigns
People Development & Leadership
- Lead, mentor, and develop Store Managers and Supervisors
- Conduct performance reviews, succession planning, and talent development
- Manage employee relations, recognition, and disciplinary processes
Customer Experience
- Maintain exceptional service standards across all departments
- Monitor customer feedback, NPS scores, and service performance
- Represent the brand within the local community
Strategic Contribution
- Act as a training hub for future store leaders
- Support rollout of new systems, products, and initiatives
- Provide operational insights to senior management and head office
Minimum Requirements
- Matric / Grade 12 Certificate
- 5–7 years’ experience in QSR or retail operations
- Minimum 3 years’ experience in a Store Manager role
- Proven track record in achieving sales and operational KPIs
- Valid driver’s licence
