Key Responsibilities
The Kitchen Manager plays a critical role in overseeing daily operations, ensuring high-quality food production, and maintaining a safe, compliant, and positive working environment.
Stock Management & Kitchen Operations

Implement and uphold all kitchen Standard Operating Procedures (SOPs)

Lead daily stock control of food items, beverages, packaging, and equipment

Oversee weekly and monthly stock counts, ensuring accuracy and integrity
-
Manage procurement requirements and maintain precise stock records
-
Reduce food wastage through thoughtful portion control and efficient stock usage
-
Maintain kitchen equipment, monitor storage conditions, and ensure full adherence to hygiene and temperature regulations
Health, Safety & Compliance
-
Lead HACCP principles and drive a strong safety-first culture
-
Conduct regular hygiene inspections and participate in Health & Safety meetings
-
Ensure compliance with Department of Health regulations and internal safety standards

Report, record, and investigate any incidents or health/safety hazards immediately
Team Leadership & Staff Development

Supervise kitchen staff, including cooks, scullers, assistants, and trainees
-
Conduct regular performance check-ins and provide constructive, motivating feedback

Lead training on safe kitchen practices, hygiene protocols, and SOPs
-
Oversee onboarding and induction to ensure smooth integration of new team members
Administration & Operational Reporting

Complete and submit operational reports accurately and on time

Oversee kitchen assets, utensils, and equipment management

Drive continuous improvement initiatives to enhance efficiency and service quality

Maintain consistent communication with management and other departments
Qualifications
Essential
-
Matric / Grade 12
-
Formal training: Degree/Diploma in Hospitality Management or Culinary Arts

Valid Food Safety or Food Hygiene Certification
Advantageous
-
Advanced Certificate in Kitchen Management

Additional training in health and safety principles
Experience & Skills Required
-
Proven experience in kitchen management or a similar hospitality leadership role
-
Strong understanding of food service operations, stock control, and menu production
-
Computer literacy, particularly Google Workspace and Excel
-
Excellent organisational, communication, and leadership abilities
-
Ability to work well under pressure while maintaining exceptional standards

Professional, well-presented, and customer-service oriented
Working Hours
-
Monday to Friday: 07h30 – 17h00
-
Every alternate Saturday: 08h00 – 13h00
