Position Overview
The Kitchen Manager is responsible for managing daily kitchen operations at Bridgewater Manor, Somerset West.
This role is suited for a hands-on hospitality professional who thrives in stock control, compliance, operational efficiency, and team leadership, ensuring smooth kitchen processes aligned with high-quality standards.
Key Responsibilities
Stock & Kitchen Operations
- Implement and uphold all Standard Operating Procedures (SOPs)
- Conduct daily stock control of food, beverages, and equipment
- Reconcile weekly/monthly stock counts and manage procurement reporting
- Reduce wastage through efficient portion control and stock management
- Maintain equipment, monitor food storage, and ensure hygiene and temperature compliance
Health, Safety & Compliance
- Lead HACCP implementation and enforce safety standards
- Conduct hygiene inspections and attend Health & Safety meetings
- Ensure compliance with the Department of Health regulations
- Report and investigate any incidents or hazards promptly
Team Leadership & Training
- Supervise and mentor kitchen staff and scullers
- Conduct regular team check-ins, feedback sessions, and performance coaching
- Train staff on SOPs, hygiene, and safe kitchen practices
- Oversee onboarding and induction of new kitchen employees
Administration & Reporting
- Complete operational reports accurately and on time
- Manage kitchen assets, utensils, and equipment
- Drive process improvements and operational efficiency initiatives
Minimum Requirements
Qualifications
- Matric
- Diploma or Certificate in Hospitality Management, Culinary Arts, or related field advantageous
- Food Safety / Hygiene Certification
Experience & Knowledge
- Previous experience in kitchen, catering, or food service environments
- Proven exposure to stock control, ordering, and inventory management
- Understanding of kitchen operations, food safety standards, and POS systems
- Basic Health & Safety knowledge
Skills & Competencies
- Strong administrative and reporting abilities
- Computer literate; proficient in Excel
- High attention to detail and accuracy
- Clear professional communication
- Ability to work under pressure and manage multiple priorities
